Totchos from Woody’s Lunch Box at Disney’s Hollywood Studios

Ingredients

  • 6 servings potato barrels divided, approximately 9 barrels per serving, or about 54 total
  • 1 pound lean ground beef
  • 3 cloves garlic, minced
  • 1 whole diced yellow onion
  • 15 ounce kidney beans, canned
  • 14.5 ounce crushed tomatoes, canned
  • 15 ounce tomato sauce, canned
  • 2 tablespoons chili powder
  • 1 tablespoon cumin, ground
  • 2 cups cheese sauce
  • 10 ounce tomatoes with chilies, diced
  • 1 1/2 cups corn chips divided
  • 1 1/2 cups sharp cheddar cheese divided
  • 1 1/2 cups sour cream divided

Instructions

  • Pre-heat oven to 450 degrees
  • Bake potato barrels for 14-16 minutes, turning barrels over half-way through cooking process
  • Once potato barrels are in the oven start to brown ground beef in a skillet then drain excess fat
  • Add minced garlic and diced onion to browned ground beef then saute over medium-high heat, stirring frequently, until onions are soft and transparent
  • Add kidney beans, crushed tomatoes, tomato sauce, chili powder and ground cumin and mix well then simmer on medium-low heat, about 10 minutes
  • While the beef mixture cooks, in a new pan or bowl combine cheese sauce and can of tomatoes with chilies then heat until warm, about 10 minutes
  • Once potato barrels are finished cooking, evenly distribute into 6 bowls
  • Add 1/4 cup corn chips to each bowl over the top of the potato barrels
  • Add 1/4 cup chili with beans to each bowl
  • Add 1/4 cup cheese sauce to each bowl
  • Add 1/4 cup sour cream to each bowl
