Pre-heat oven to 450 degrees
Bake potato barrels for 14-16 minutes, turning barrels over half-way through cooking process
Once potato barrels are in the oven start to brown ground beef in a skillet then drain excess fat
Add minced garlic and diced onion to browned ground beef then saute over medium-high heat, stirring frequently, until onions are soft and transparent
Add kidney beans, crushed tomatoes, tomato sauce, chili powder and ground cumin and mix well then simmer on medium-low heat, about 10 minutes
While the beef mixture cooks, in a new pan or bowl combine cheese sauce and can of tomatoes with chilies then heat until warm, about 10 minutes
Once potato barrels are finished cooking, evenly distribute into 6 bowls
Add 1/4 cup corn chips to each bowl over the top of the potato barrels
Add 1/4 cup chili with beans to each bowl
Add 1/4 cup cheese sauce to each bowl
Add 1/4 cup sour cream to each bowl
